Can You Thaw And Refreeze?

I am trying to source a reasonable price for roo meat.

I can get it for $5 a kg roll unfrozen, or $20 for 5kg, but it comes frozen which is too big to stay fresh long enough.

Can i buy it frozen, thaw it ,and refreeze it in smaller portions again, or not recommended?

I have bought roo tails in the past, about 6 per bag, and have left in the fridge over night so only very slightly defrosted and just enough that I can pry them apart to bag up and refreeze.

Same with the chicken mince, just enough so I can get my knife through it to repack into smaller portions.

Both would be considered still frozen I think.

A big sharp knife should do the trick :D

Juice this is where I get my roo mince and they deliver to Sydney. You can order 10 kilos but they come in 1kg frozen blocks or you can order 5 kilo of fresh. I don't know what his delivery charges are as I pick up so may be too expensive but just send Ben an email and get a price sheet. His roo mince is very lean.
