Weighing in at 400g, the truffle was found on the farm of Sherry McArdle-English, out on Majura Road. ''We've been hunting every second day since the season began a week or so ago,'' Ms McArdle-English said. ''We've found quite a few, including three more than 200g, but this one is just beautiful. ''The very cold weather over the past week has helped to mature them really quickly and that helps bring them up to an A-grade standard.'' Truffles are judged and ultimately graded like wine, Ms McArdle-English said. ''We go through a very similar process when we're judging the truffles,'' she says. ''You look at the colour, the density, the aroma and ultimately the taste. All those things culminate to give you the grading.'' Ms McArdle-English estimates the truffle is worth close to $1000 and she has already promised it to Janet Jeffs, executive chef at Ginger Catering. ''I've already been on the phone to Janet,'' McArdle-English says, ''and she's beside herself with excitement''. No doubt Ms Jeffs will use the truffle in her menu for the Australian Truffle Festival which runs all month, with a varied program from dinners to truffle hunts. A grand truffle dinner was held at the Hyatt Hotel in Canberra last night. Ainslie's Pulp Kitchen has a truffle tasting menu each Monday. At Flint, in Acton, Wednesday night is truffle night. And Lerida Estate winery will feature truffle dishes on its Cafe Lerida menu during the season.
